1 1/2 tbsp. cornstarch
1/4 to 1/3 cup brown sugar
1/2 cup cold water
4 cups sweetened sliced peaches
1/4 cup plus 1 tbsp. butter
1 tbsp. lemon juice
1 cup sifted all-purpose flour
1 tbsp. white sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup milk
1 egg, slightly beaten
Mix first three ingredients; add peaches. Cook and stir until thickened; add 1 tablespoon butter and lemon juice. Pour into 8-inch round baking dish. Sift together flour, white sugar, baking powder and salt; cut in remaining butter until like coarse crumbs. Mix milk and egg; add all at once to dry ingredients, stir ring just to moisten. Drop by spoonfuls atop hot fruit. Sprinkle with additional sugar. Bake at 400 degrees 20 minutes or until biscuit top is done.
