Apple Dumplings

  • 1 cup sugar
  • 3/4 cup water
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tbsp. red cinnamon
  • 1/4 cup butter
  • 2 cups all-purpose flour, sifted
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2/3 cup shortening
  • 1/3 cup milk or water
  • 6 large apples, pared and cored

To make sauce combine sugar, water, cinnamon, nutmeg and candies and cook 5 minutes; add butter. Sift measured flour, salt and baking powder; cut in shortening. Add milk all at once; stir just until flour is moistened. Roll 1/4 inch thick; cut six 5-inch squares. Place 1 apple on each square; sprinkle generously with additional sugar and cinnamon. Dot with additional butter; fold corners and pinch edges. Place 1 inch apart in greased 8 x 11-inch Pyrex dish; pour sauce over dumplings. Bake at 350 degrees 35 to 40 minutes. Serve hot with ice cream or whipped cream for topping.

Yield: 6 servings.
