Buttermilk Cake With Orange Icing

  • 3 cups flour
  • 1/2 tsp. soda
  • 1 tsp. baking powder
  • 2 1/2 cups sugar
  • 1 stick plus 2 tbsp. butter
  • 1 cup buttermilk
  • 1 tsp. vanilla
  • 5 eggs
  • 1/2 lb. powdered sugar
  • Grated rind of 1 orange
  • Orange juice

Sift together flour, soda, baking powder and sugar; add 1 stick butter and buttermilk. Add vanilla; mix well. Add eggs, one at a time; pour in lined tube pan. Bake at 325 degrees for about 1 hour and 15 minutes. Place powdered sugar in small mixing bowl; add remaining butter, orange rind and enough orange juice to make spreading consistency. Beat; spread on cake while still hot.
