Banana Layer Cake

  • 6 ripe med. bananas, mashed
  • Sugar
  • 1 1/2 tsp. vanilla
  • 2/3 cup shortening
  • 2 1/4 cups sifted cake flour
  • 3 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 cup plus 2 tbsp. milk
  • 2 eggs

Combine bananas, 1/2 to 3/4 cup sugar and 1/2 teaspoon vanilla; mix well. Set aside. Place shortening in bowl; stir to soften. Combine flour, baking powder, salt and 1 2/3 cups sugar in sifter; sift onto shortening. Add 3/4 cup milk and remaining vanilla. Blend; beat 2 minutes at low speed of mixer or 300 strokes by hand. Add eggs, remaining milk and beat 1 minute or 150 strokes by hand. Grease and flour lightly 8 or 9-inch layer pans. Place about 3 tablespoons batter in each pan and spread very thin. Bake at 350 degrees until done, about 10 minutes. Remove from pan onto cake plate and immediately spread with banana mixture. Continue baking, greasing and flouring pans after each layer until all batter and banana mixture are used. Serve warm.

Yield: 12 servings.
