Pineapple Fruitcake

  • 3/4 cup butter, at room temperature
  • 1 cup sugar
  • 2 1/2 cups all-purpose flour
  • 2/3 cup mixed peel
  • 1 lb. raisins, blanched
  • 1/2 lb. red crystallized cherries
  • 1/2 lb. green crystallized cherries
  • 3 eggs, at room temperature
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 cups crushed pineapple

Preheat oven to 275 degrees. Grease and line two loaf pans with three layers of waxed paper. Cream butter and sugar well. Sprinkle a small amount of flour over fruits, except pineapple; add to creamed mixture. Add eggs; beat well. Sift remaining flour, salt and baking powder; add alternately with pineapple to creamed mixture. Fill pans two-thirds full. Bake 2 hours and 30 minutes to 3 hours and 30 minutes. Remove from pans; let stand until cold.
