Apple Cake With Icing

  • 1 cup cooking oil
  • 2 cups sugar
  • 3 large eggs
  • 2 cups plain flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. vanilla
  • 3 cups tart raw apples, chopped
  • 1/2 cup raisins
  • 1 cup nuts

Mix oil, sugar and eggs together; add remaining dry ingredients and mix thoroughly. Stir in vanilla, apples, raisins and nuts. Pour batter into ungreased 9 x 12 x 3-inch cake pan. Bake in preheated oven at 350 degrees for 40 to 45 minutes or until cake draws away from sides of pan.

Icing

  • 1/2 stick margarine
  • 1/4 cup evaporated milk
  • 1 cup brown sugar
  • 1 can flaked coconut

Combine all ingredients; simmer until margarine and sugar are melted. Pour over warm cake and place under broiler until lightly browned.
