- 1 lb. butter
- 3/4 lb. sugar
- 9 egg yolks, well beaten
- 9 egg whites, well beaten
- 1 lb. flour
- 2 tbsp. baking powder
- 2 tsp. each mace, cinnamon and nutmeg
- 1/2 lb. watermelon rind preserves
- 1 lb. preserved figs
- 2 lb. raisins
- 1 lb. pecans
- 1/2 cup grape juice
Cream butter; add sugar gradually. Add egg yolks and whites. Sift flour with baking powder and spices. Add next four ingredients; add to egg mixture. Add grape juice; beat well. Turn into cake pans. Bake at 250 to 300 degrees for 4 hours or steam 3 hours and bake 1 hour and 30 minutes.
Yield: 30-35 servings.
