Alabama Jam Cake

  • 1 lb. butter
  • 3/4 lb. sugar
  • 9 egg yolks, well beaten
  • 9 egg whites, well beaten
  • 1 lb. flour
  • 2 tbsp. baking powder
  • 2 tsp. each mace, cinnamon and nutmeg
  • 1/2 lb. watermelon rind preserves
  • 1 lb. preserved figs
  • 2 lb. raisins
  • 1 lb. pecans
  • 1/2 cup grape juice

Cream butter; add sugar gradually. Add egg yolks and whites. Sift flour with baking powder and spices. Add next four ingredients; add to egg mixture. Add grape juice; beat well. Turn into cake pans. Bake at 250 to 300 degrees for 4 hours or steam 3 hours and bake 1 hour and 30 minutes.

Yield: 30-35 servings.
