Carrot Cake With Pineapple

  • 2 cups flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 cup cooking oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups grated carrots
  • 1 sm. can crushed pineapple
  • 3/4 cup chopped nuts

Sift all dry ingredients together and set aside. Mix oil, sugar and eggs, beating after each addition. Add dry ingredients; mix well. Add carrots, pineapple and nuts. Grease and flour two 13 x 9 x 2 1/2-inch pans. Bake 30 to 35 minutes at 325 degrees; cool.

Icing

  • 1 8-oz. pkg. cream cheese
  • 1 stick oleo
  • 1 box powdered sugar
  • 2 tsp. vanilla

Beat all ingredients well. Spread on cake.

Yield: 12-15 servings.
