Golden Pecan Tassies

  • 1 cup soft butter
  • 3 3-oz. pkg. cream cheese at room temperature
  • 2 cups sifted flour

Blend butter and cream cheese; add flour gradually, mixing thoroughly. Work into smooth dough with fingers; shape into balls about 1 1/4 inches in diameter. Put each ball in small muffin cup; press dough to bottom and sides with thumb, making a shell.

Filling

  • 2 eggs
  • 1 1/2 cups brown sugar
  • 2 tbsp. melted butter
  • Dash of salt
  • 1/2 tsp. vanilla
  • 1 cup chopped pecans

Beat eggs slightly; gradually beat in brown sugar, butter, salt and vanilla. Sprinkle half the chopped pecans over bottom of dough-lined cups; spoon in brown sugar mixture, filling cups almost full. Sprinkle remaining nuts on top. Bake in 350-degree oven 15 minutes. Reduce heat to 250 degrees; bake 10 minutes.

Yield: 3-4 dozen.
