Cherry Fudge Cake

  • 1 1/3 cup biscuit mix
  • 3/4 cup sugar
  • 1/3 cup cocoa
  • 3 tbsp. soft shortening
  • 1 egg
  • 3/4 cup milk
  • 1 tsp. vanilla
  • 1/4 cup chopped, drained maraschino cherries

Heat oven to 350 degrees. Grease and flour 8 x 8 x 2-inch cake pan. In medium bowl, mix biscuit mix, sugar and cocoa; add shortening, egg and about one-half of milk. Beat; add rest of milk. Add vanilla; beat. Turn into pan; sprinkle with cherries. Bake 35 minutes. Serve topped with whipped cream.

Yield: 8 servings.
